Ingredients
- (2 cups diced) Chicken-Large 3.5-5lbs Whole Roaster Pasture Raised
- (1/2) Red Onion-Diced
- (1 med) Carrot-Diced
- (1 stalk) Celery-Diced
- (1/2 cup) Mayonnaise
- (1 Tablespoon) Red wine vinegar
- (2 Tablespoons) Dijon Mustard
- (to taste) Salt
- (to taste) Pepper

I'm thrilled to have chicken in the kitchen again!
We sold out before the holidays last year, so this was the longest we've gone without chicken since we added it to the farm menu in 2020. And since we have started raising our own, we treat it like a seasonal item, eating when it's available and not the rest of the year.
When I'm roasting whole chickens, I often make an extra just for salad, or you can make this with grilled breast or thighs. Of course, adjust the amounts to meet the appetites of your household.
This is my base recipe. I often play around with different vinegars, mustards, fresh herbs, spices, including curry and add-ins, but this is a great place to start.

Variations:
Make it sweet: add 1/4 cup each of diced apples and dried cranberries
Make it tangy: add diced dill pickle and hard-boiled egg
Make it spicy: add diced jalapeno or green chilies
Mix all the ingredients and serve right away or refrigerate and eat when hungry.
